One of my most favorite things in the world to eat is tacos. I think I probably sort of most definitely mentioned this before that I am a big fan of Tex-Mex and Mexican food.
I came about this easy recipe because I recently bought chicken thighs at my favorite farm market – Lake Meadow Naturals in Ocoee, FL – and was planning on using them to make my no-fail Slow Cooker Chicken Verde but then decided to whip up a batch of my Homemade BBQ Sauce and drench the chicken thighs in that instead.
After all, that jar of pickled jalapenos sitting in the refrigerator was just begging to be used for something yummy!
You certainly can use your favorite BBQ sauce to make this recipe but I’d recommend trying my Homemade BBQ Sauce – it’s gluten-free and free of any high fructose corn syrup or preservatives and other nasty things. Just all-natural goodness!
The best part of this recipe? Aside from the 30 minutes or so it takes to make the Homemade BBQ Sauce, the rest of the recipe is completely hands-off and finished in the slow cooker!
As a side note for all you fellow adventurous cooks out there, I love to make my own corn tortillas using a great tortilla press that my father got me for Christmas last year! It’s also much more cost-friendly to buy a big bag of masa and churn out countless tortillas for the same price as one small package of a few! Get yourself a tortilla press and try it. You’ll never go back to store-bought tortillas again! 🙂
I’d recommend keeping this recipe simple and serving these tacos with fresh corn tortillas, pickled jalapenos, and a nice helping of shredded sharp cheddar!
