Doesn’t this salsa look like summer in a bowl?
This Black Bean, Corn & Avocado Salsa – I could eat the entire bowl at one time – and that is no joke. I had to stop eating it in order to take photos of it before it disappeared!
I was inspired to create this from my many visits to Heath’s Natural Foods store in New Smyrna Beach, FL. I’ve been going there for years and they have a great hot / cold foods bar to pick up some tasty lunch before hitting the beach. Recently, I’ve discovered their delicious Avocado, Black Bean, and Corn Salad. Filling; full of nutrients; and vegan, gluten-free, dairy-free, and egg-free too!
I wanted to replicate those flavors at home as a salsa. I added cilantro, lime juice, and just a touch of honey, as well as red wine vinegar for subtle tartness.
And it is irresistible!
